Kovakka Mezhukkupuratti (Ivy Gourd)

Ingredients
1.Kovakka -2 cups or 1frozen pack
2.Greenchillies - 2-4 (as per your spice level)
3. Red chilli powder - 1/4tspn
4.Turmeric Powder - a pinch
5.Shallots/onions - a cup (thinly sliced)

Preperation:-
1.Heat oil in a kadai and splutter mustard if you prefer.
2.Add shallots and greenchillies and fry it till it turns its colour.
3.Add red chili powder if you want but adjust the spice level accordingly by reducing or avoiding greenchillies and also add turmeric powder.
4.Fry it till the raw smell leaves in reduced flame.
5.Now add sliced veg to this and saute it well.
6.Sprinkle a hand full of water to this and mix it well.
7.Cover it with a lid and let it cook in a low flame.
8.Once you see the veg is almost cooked, take off the lid and put it in low flame.
9.Now, leave it until you see some oil on the bottom. Fry it in that oil keep on stirring.

The picture above is what i made in microwave. Easy and less time consuming. Nothing much to do. Microwave oil with mustard seeds till it stops spluttering, add chopped onions with green chillies, cook it till onions are well sauteed, add a pinch of turmeric powder with 1/2 tspn of red chilli powder and curry leaves and stir well. Cook it till for another 30-50 sec. Add sliced kovakka and stirr well with salt. Cook it with closed lid till it is done and then make it dry by cooking it open. Yummy!!! I mostly cook veggies in microwave for dinner as we prefer kanji & payar for dinner. Delicious, Nutrinitious & Protienitious..
