Thoran (vegtable with grated coconut)

Thoran is a very common side dish in Kerala. For a malayali, a meal without thoran is kind of incomplete. It is not at all spicy. We can make thoran with any vegetable. This goes good with chapati and rice. Here i am going to make cabbage and carrot thoran.
Ingredients :-
1)Cabbage & Carrot - 3-4 cups (shreded)
2)Coconut - 1 cup (grated - fresh or frozen)
3)Shallots - 2-3 (big size - chopped)
4)Green chillies - 2nos (optional)
5)Whole redchillies - 2nos
6)Urad dal - 1tspn
7)Chana dal - 1tspn (opional)
8)Mustard seeds - 1/2 -3/4 tspn
10)Turmeric powder - 1/2 tspn
11)Cumin (jeera) powder - 1tspn
12)Ginger Garlic paste - 1/4tspn
13)Oil - as required
14)Curryleaves - 1-2 strings
Preperation :-
1)Heat oil in a pan.
2)Splutter mustard seeds.
3)Now add urad dal and chana dal and fry it till it turns its colour a bit.
4)Add whole redchillies and curryleaves to this and let it spluter.
5)Add 1/4th tspn of turmeric powder and fry it a little bit.
6)Add chopped shallots and greenchillies to this and sautee it till it is tansluscent.
7)Now add vegetables and mix it well with a little bit of water. Let it cook.
8)Meanwhile, mix coconut with 1/4tspn turmeric powder, jeera powder, ginger and garlic paste.
9)Once vegetables are cooked, add this coconut mixture into it and keep it in the flame for some time.
10)Switch off the stove once you get a good smell.
