Fried Rice

Ingredients :-
1.Basmati rice - 3cups (Rice cooker measuring cup)
2.Beans - 1/2 cup (chopped)
3.Carrots - 1/2 cup (chopped)
4.Greenpeas - 1/4 cup (baked)
5.Eggs - 4nos
6.Mushroom - 1/2 cup (sliced)
7.Onion - 1 big (sliced)
8.Soy sauce - 2tspn
9.Vinegar - 1 tspn
10.Cardamom - 5nos
11.Cinnamon sticks - 2-3 (in length of our pointing finger)
12.Cloves - 3nos
13.Peppercorns - 1/2tspn
14.Ghee - 1tbspn
15.Oil - as required
16.Water - 5 cups (Rice cooker measuring cup)
17.Chicken stock - 3 cups
18.Salt - to taste.
19.Pepper powder - to taste
20.Spring onions - as required
21.Asparagus - 2-4 tbspn (chopped)
22.Cillantro - less than a hand full (optional)
Preperation :-
{1} Rice :-
1.Soak rice for 10 mins in hot water and drain it for 10 mins.
2.Heat ghee in a wide kadai and splutter whole spices in it and fry for few seconds.
3.Add drained rice to it and fry it for another 10 mins.
4.Meanwhile, boil 5 cups of water with 1 cup (rice cooker measuring cup) of chicken stock with vinegar or few drops of lemon in a heavy bottom pan with salt to taste.
5.Add this fried rice to the boiling water, stirr it well and close it with a tight lid so that vapour wont go out.
6.Check it after few mins and let it cook till water is completely absorbed. Make sure that you wont over cook the rice. Rice cooker will be the best to cook basmati rice.
7.Keep the cooked rice aside after transfering it into another vessel.
Rice part is done.
{2}Vegetables :-
1.Boil 2 cups of chicken stock in a pan and add chopped carrot, beans and baked peas to it.
2.Boil it in high flame so that stock will evaporate very quickly and vegetables wont be overcooked.
3.Reduce the flame once you see dry vegies and add 1 tspn oil to it and fry it for few mins or till it is cooked properly.
4.Sprinkle some pepper powder and 1/2 tspn of soy sauce to vegies while sauteeing.
5.Keep this mix aside.
{3}Masala :-
1.Heat oil in a pan and sautee chopped onions till it is transluscent.
2.Add mushrooms to it with 1/2 tspn pepper powder and 1/2 tspn soy sauce and sautee it well till all water is dried up well.
3.Keep this mix aside.
{4}Eggs :- Beat eggs with 1/2 tspn of pepper powder and salt well and make scramble with it. Keep it aside once it is well fried.
{5}Garnishing :-
1.Chop cillantro, asparagus and spring onions and keep it in three seperate plates.
1.Now everything is ready to mix with rice. Start little by little.
2.Heat a kadai and add cooked rice with other things made above little by little.
3.Dont forget to sprinkle some fresh pepper powder in between. Just a little for flavour.
4.Add rest of the soy sauce to rice and fry it well in kadai from bottom to top.
5.Make sure that you wont mix is roughly. Be gentle on each and every grain of rice.
6.Finally, garnish with no{5} and serve it hot.
NB: You can also mix some cooked chicken or shrimps to make it a non-veg fried rice. If you prefer a pure veg fried rice, avoid eggs and chicken stock and use water instead of chicken stock. You can also avoid soy sauce if you prefer white colour for your rice. Infact, that will make your fried rice more colourful with other added veggies.
